Zizania Nutrition Counseling Program
While we have several programs to fit your goals and budget, our most successful program is Restoration. It’s composed of 6 sessions of 2 hours each. The sessions have 2 folds: a weekly review of your health status, a discussion of ingredients and their nutritional value, and hands-on cooking. Each session covers a different topic. All recipes are custom-made to target your specific health condition while respecting your food preference
and preserving flavor to increase pleasure in eating. There is no portion control, or carb/calorie counting.
Each session builds up on the previous one and depends on your progress. This is why sending your food journal daily is crucial to your success. The foods you will be advised to eat and the recipes we’ll make depend on your glucose level, weight loss status, GI reactions, or how you metabolize nutrients.
Session I
Health status overview
- This is an in-depth education session where we explain how to manage your symptoms or condition, set expectations, and provide you with a step-by-step plan to reach your health goal
- You will receive a starter-kit with easy recipes that require little time to prepare, nutrition education material, and health-related handouts
- kitchen inventory: we go over your pantry and fridge to divide your foods into 3 sets: healthy foods; foods that are healthy but not right for you yet; foods that should be discarded–those that contain unnecessary sugar, artificial sweeteners, high fructose corn syrup, trans fats, or loaded with chemicals.
This session does not include cooking
Each subsequent session covers the following
Discussion of health topics related to your condition or goal such as: digestion, symptoms arising due to the diet change, nutrient content of ingredients and the reason behind the paring method in each recipe we cook in your own kitchen. This is training in how to create meals that are rich in micro-nutrients, using low calorie ingredients and low in macro-nutrients by reducing the amounts of high calories ingredients.
Each week introduces new recipes and a chance to enjoy new flavors.
Grocery Store Tour
This session will help you learn a variety of convenient, ready-to-eat products that are still nutritious; you will learn how to decipher food labels and their hidden meaning. You will learn how to chose different fruits and vegetables to get the highest quality; conventional vs. organic; what it means to eat in season and why; fresh vs. frozen; different oils and their pros and cons, and finally what type of treats are safe to eat while you’re trying to address a health concern such as weight loss, autoimmune disease, or diabetes.
Last Session
Knife skills: we will spend the last session focusing on knife skills. You will learn how to use a knife correctly to make cooking fast and easy: slice, dice, mince different foods, such as onions, cabbage, carrots, celery; how to chop or slice tomatoes, bell peppers, cucumbers and whatever fruit or vegetables you want to learn how prepare. You are always involved in the process and at the end of the program, you will be able to continue implementing what you learned to keep your results and continue to improve your health.
