It is erroneously believed that sugar/carbohydrates are at the origin of type 2 diabetes. This misconception is due to the fact that we often talk about blood sugar when referring to diabetes, when in reality, there is no sugar in the blood; it’s glucose that circulates in our blood vessels. Is there a difference? You might ask. There is a huge difference. Sugar is a disaccharide, meaning it is composed of 2 sugars: fructose and glucose. During the breakdown of sugar, the glucose is used for fuel and the fructose is converted to fat for later conversion to glucose when needed (fructose cannot be used for energy; it has to be converted to fat, then to glucose.)

So when a person consumes sugar or carbohydrates, the glucose level in the blood rises. In a healthy person, the glucose is then transported to tissues. In the presence of insulin resistance, the glucose circulates in the blood but does not get absorbed, or uptaken by the cells–no response to insulin.
